Chocolate and Pumpkin Ice Cream Sandwiches

2 pints of Pumpkin gelato or ice cream
4 chocolate graham crackers halved to make rectangles
6 oz of bittersweet chocolate chopped up
Directions
- Let your ice cream set out at room temperature for at least 10 minutes. Line a loaf pan with some plastic saran and then add your ice cream now freeze for about 2 hours until firm.
- Using the plastic wrap remove the ice cream from the pan and cut it into pieces. Sandwich between the graham crackers and freeze until you are ready to serve your guests.
- Right before serving, microwave your chocolate for 30-second intervals stirring every 30 seconds until melted.
- Drizzle the smooth chocolate over the sandwiches before serving.
